The already popular gastrobar SPICE by Chris Salans recently opened in Sanur, providing a funky, casual hangout spot that serves a selection of fine food and drinks to cater to Bali’s ever-more discerning clientele. The cosy, vibrant, air-conditioned interior edges towards comfortable minimalism, but with some dramatic, eye-catching lighting – especially over the bar. Here the bartenders mix carefully crafted cocktails featuring Indonesian spices that can be perfectly matched to the enticing menu. The kemangi gin and tonic and passion fruit mojito are sure to go down well.
Using sustainable, seasonally available, fresh local produce, each dish features a specific local ingredient. Choose an assortment of nibbles, hearty meals and gorgeous desserts to share with your group, or if you can’t decide, perhaps go for the four-course set menu featuring the most popular dishes. Whatever you choose, we highly recommend the tapioca root fries served with basa gede espuma either while you are deciding or as an appetizer. For mains, why not try the chicken breast with tomato salad and sambal kecicang, or the hearty beef brisket with fat noodles in kluwek broth, or if you crave seafood, the slipper lobster in curry leaf butter with tempeh is simply superb. A refreshing round off to the meal is the kalamanski sorbet, although you may well enjoy the warm apple pie with Flores vanilla bean ice cream instead.
