On 22nd March, Basque – Bar de Tapas played gracious host to two distinguished guests – the internationally acclaimed winemaker Marqués de Riscal and Indonesia’s own wunderkind culinary superstar Chef Mandif M Warokka. For only one night, guests enjoyed an enchanting four-course dinner specially prepared by Chef Mandif, with delightful pairings by Marqués de Riscal wines.
The dinner started off with a selection of tantalising amuse bouche – a scrumptious prawn croquette delightfully presented as a botanical wonderland with a fresh oyster matched with a tangy and rich sauce served to the accompaniment of a delightful Shervino’s Martini.
For the appetiser, guests enjoyed brined poached tuna, served with perfectly roasted vegetables on a toasted ciabatta, a superb dish of grilled octopus with garlic chips, pickled red chilli balanced with tender cubes of sweet potatoes and a pan-seared foie gras finished with pomegranate sauce. The light and floral Marqués de Riscal Limousin 2013 matched the dishes wonderfully.
The mains included spiced Chilean sea bass, cooked to flaky perfection and served with grilled vegetables. The sea bass was paired with the fruity Marqués de Riscal Reserva 2011. Next came braised short ribs with a side of patatas bravas and salsa, paired with the bodacious Marqués de Riscal Gran Reserva 2005 and the gorgeous Marqués de Riscal Baron de Chirel Reserva 2005 vintage. A delectable dessert of Chocolate in Texture was served to conclude the exquisite wine dinner.
