Four Seasons Resort Bali at Sayan’s Head Chef Wayan Sutariawan aims to revive forgotten recipes from across Indonesia in his new cookbook-memoir.
Head chef Wayan Sutariawan, more familiarly known as Suta, from Four Seasons Resort Bali at Sayan recently published a cookbook-memoir, comprising more than 30 recipes that encompass his native Balinese favourites, street food from Sumatra, Java and Sulawesi, as well as a “rare but not forgotten” section. The book also showcases personal anecdotes, heartwarming stories from Suta’s childhood and cultural insights, bringing the flavours in the book to life.
“The evolution of modern society in Indonesia has resulted in some of our most iconic dishes being lost,” said Suta. “These dishes and the stories behind them are a window into Indonesia’s heritage, which has shaped who we are today. For me as a chef, I feel incredibly sad to see these recipes disappearing, and I want to do what I can to preserve them.”
Suta was first inspired to write the book when a guest at the resort’s on-site Chef’s Table Dinner at Sokasi gave the suggestion. Chef’s Table Dinner at Sokasi is an intimate seven-course Balinese degustation menu available for a maximum of eight guets, showcasing dishes that are usually reserved for large Balinese-Hindu ceremonies. Titled “Cherished Recipes From My Childhood”, the cookbook-memoir is available for purchase from Four Seasons Resort Bali at Sayan, priced at IDR1,300,000.
