Exquisite Media and Bank BRI presented a night of indulgence with Exquisite Masters of Culinary.
Celebrating Indonesia’s 75th Independence Day, Exquisite Media and Bank BRI collaborated to create a memorable dinner with Exquisite Masters of Culinary. Taking place at the magnificent Koral Restaurant at The Apurva Kempinski Bali, the night brought together some of Bali’s best culinary artists: Chris Salans from Mozaic Restaurant Gastronomique and Spice by Chris Salans, Maurizio Bombini from MAURI, Vincent Nigita from Vincent Nigita Pâtisserie, and Koral Restaurant’s executive sous chef Andrea Astone.
The dinner, which was held on 18 August 2020, was attended by VIP guests and discerning diners who were on the island of Bali to enjoy the long weekend holiday. With red and white as the official dress code for dinner, guests were treated to an eight-course degustation menu, complete with wine and cocktail pairing by mixologist maestro Aldho Gunawan.
As the sun set on the horizon, guests were invited to socialize with pre-dinner drinks and nibbles while keeping a safe distance, moving to the stunning dining room with its massive aquarium for the gastronomic feast.
Chris Salans presented the first course of the evening with faux beef carpaccio, which used watermelon as the main ingredient, topped with rendang oil and Parmesan custard. Next was seppia and ravioli by Maurizio Bombini, showcasing the best of contemporary Italian cooking. The dinner then continued with king mackerel confit in coconut oil by Chris Salans and two excellent dishes by Andrea Astone, which were Fish N’Shell and lamb duo. Vincent Nigita was responsible for concluding the dinner with two of his dessert creations, Le Kiwi and Le Sarrasin.
Making this dinner an even more unforgettable experience, diners were treated to a surprise performance by a soprano singer, whose hypnotizing voice, along with the mysticism of being underwater, successfully cemented this dinner in everyone’s memories for a long time.
