Situated at the luxurious The Apurva Kempinski Bali, Bai Yun offers a unique addition to the island’s diverse culinary scene. Since its opening in 2021, the restaurant has introduced the communal hot pot dining experience, which has its origins in China before spreading throughout Southeast Asia. The restaurant prides itself on using top-notch ingredients sourced globally, with imported meats and seafood, while vegetables are locally procured for maximum freshness.
A key component of a hot pot meal is the broth, which sets the foundation for the overall dining experience. Bai Yun’s chefs have developed a variety of signature soup bases, including the comforting chicken herbal and the rich pork ribs, as well as an excellent vegetarian option. Diners can mix and match broths to enjoy multiple flavours simultaneously, accompanied by a selection of premium meats, fresh seafood, vegetables, noodles, mushrooms, tofu and meatballs. Beyond hot pot, Bai Yun also serves a delightful range of dim sum during lunchtime and weekend brunch. The Dim Sum and More offering is an all-you-can-eat experience, featuring up to 31 varieties of dim sum daily from noon to 3pm. Diners start with 15 dim sum selections at the table, with the option to order more as they desire.
