Disciples Escoffier Worldwide Goes to Indonesia

The non-profit association dedicated to the culinary arts and the transmission of knowledge had just held its first event in Indonesia, marking the country’s participation in the membership.

Disciples Escoffier worldwide association announced the results of its first event in Bali on 21 May 2022. The day started with the first Disciples Escoffier Young Talent’s Competition in Indonesia at the Politeknik International Bali school in Tabanan, comprising eight young chefs under 25 years old from all over Indonesia. The participating chefs had to cook and present a classic August Escoffier dish of stuffed chicken ballotine with a sauce poulette, served with two side dishes based on green asparagus and rice.

All the participants had three hours to prepare, cook and present their creations to a jury of their peers, presided over by Chef Jean-Yves Learanguer, who was voted Meilleur Ouvrier de France (Best Craftsman of France) in 1996. Kadek Sumiarta from The Apurva Kempinski Bali won the first place, with Wayan Pamawinaka from The St. Regis Bali Resort and Ni Luh Nita Wulandari from Raffles Bali in second and third places respectively. Sumiarta will represent Indonesia in the Asia Pacific Regional selection in September 2022, the result of which will determine Indonesia’s participation in the World Finals in 2023.

The day continued with an inauguration ceremony at The Apurva Kempinski Bali, where 27 new members were inducted into the Disciples Escoffier association, including chefs, pastry chefs, restaurateurs, hoteliers, photographers, sommeliers, wine makers and purveyors of fine food.

Disciples Escoffier Asia Pacific’s President Chef Robert Fontana and the Indonesian Chapter’s President Chef Gilles Marx led the induction ceremony. “It is an honour to be able to inaugurate a chapter of the Disciples Escoffier in Indonesia,” Robert said. “Indonesia has many talented chefs and epicureans who, in collaboration with the Disciples Escoffier Association, can grow their worldwide presence as leaders of the food industry. We are looking forward to growing the hospitality industry here in Indonesia.”

The eventful day wrapped up with the first Disciples Escoffier’s annual gala dinner in Bali at Koral Restaurant, The Apurva Kempinski Bali with a total of 120 guests. The dinner saw the finest wines and culinary creations of Bali’s leading chefs, including Maurizio Bombini, Mandif Warokka, Gildas Perrin, Vincent Nigita and the chefs of The Apurva Kempinski Bali.
