In September, Uma Cucina, the popular Italian-inspired restaurant and laidback lounge at COMO Uma Ubud, celebrated its third anniversary in some style. The evening opened with a fabulous selection of its celebrated cocktails and canapés, before enticing invited guests with a superbly paired three-course anniversary dinner accompanied by some gentle, sweet soul music. The dinner demonstrated the chefs’ dedication to sourcing and using the best and freshest local produce, as well as their skill in creating classic dishes that blend traditional Italian flavours and textures with contemporary culinary panache; perhaps none more so that the delicious and succulent seared Lombok red mullet with clam, chickpea and saffron broth, paired with a light and crisp 2014 Farnese Pinot Grigio.
