The culinary world recently buzzed with excitement as Disciples Escoffier Indonesia revealed the victors of the highly anticipated Young Talent Escoffier 2024 culinary competition. Held on 3 May 2024 at Politeknik International Bali, this event was a showcase of budding culinary talents, highlighting their innovative skills and passion for gastronomy.
Disciples Escoffier Indonesia, a non-profit association linked with Disciples Escoffier International, can trace its roots back to Nice, France in 1954. Committed to culinary arts and knowledge sharing, the association carries the esteemed legacy of Auguste Escoffier while fostering creativity in French cuisine.
The competition revolved around creating a culinary masterpiece rooted in classic French cuisine. Contestants were challenged to craft a red snapper dish, delicately encased in a puffed pastry crust – a tribute to French gastronomic traditions. With a strict time limit of three hours and 30 minutes, participants showcased their technical finesse and culinary ingenuity before a discerning panel of judges.
The competition’s top honours went to I Wayan Nara from The Apurva Kempinski Bali, followed by Michael Samuel from Umana Bali, LXR Hotels & Resorts in second place and Calvin Suciawan from Bonito Fish Bar in third place. Each contestant received a range of prizes and heartfelt appreciation from the jury and their peers.
