The Ritz-Carlton Jakarta, Pacific Place held a dazzling wine dinner in collaboration with Michael David Winery on 17th November. The acclaimed American-based winery supplied five lovely vintage white and red wines to accompany the sumptuous culinary creations dreamt up by the hotel’s Executive Chef Sean Macdougall.
For the first course, guests enjoyed a refreshing dish of Hokkaido scallops with oyster mushroom carpaccio finished off with apple cider puree, black lime and lime salsa. The bold and innovative dish was paired perfectly with the Michael David Sauvignon Blanc 2016. The next course was an elegantly executed duck confit and rosella risotto with sides of caponata purée and lime leaf tempeh. The dish was matched beautifully with the 2014 vintage of the Petite Petit Petite Sirah Petite Verdot. The first main course was a daring dish of charred octopus with sweet potato straws and a sauce of pepper, walnut and tomato. The Freakshow Cabernet Sauvignon 2014 was an inspired pairing for the dish. The next main course was blue cheese-cured beef tenderloin with kimchi hollandaise and beetroot glaze, accompanied by the bodacious The 7 Deadly Zins Zinfandel 2014.
As a perfect end to the exquisite wine dinner, a dessert of lime custard pudding with torch ginger ice cream was served. Diners enjoyed the dessert with a Michael David Chardonnay 2016 vintage.
